Soppressata is made from finely chopped pork, a small percentage of pork fat, salt, and pepper, and is stuffed into a natural pork casing characterized by its wide and irregular shape, which gives the product a softer texture compared to other cured meats. After being stuffed, it is smoked with oak bark, almond shells, and essences from the Mediterranean scrub.
The skin has an amber hue, while the meat is a deep red color, marbled with white fat. On the nose, it expresses sweet and clean notes, particularly intense but not overpowering hints of wood and smoke. These sensations carry through to the palate, blending with a sweet flavor.
Curing time: 100 days
Storage: Store at room temperature and do not cover with plastic wrap.
Pairing: Enjoy with local cheeses and a nice glass of wine.
