Azienda Cervellera's Soppressata is an artisanal cured meat typical of the Martinese tradition, made with selected meat from pigs raised in the wild in the lower Murgia Pugliese. The knife-point processing of the meats, combined with salt, pepper, and cooked wine, gives the product a soft, compact texture and a sweet, harmonious flavor, with delicate aromas of wood and smoke.
The cured meat is stuffed into natural pork casings with a wide, irregular shape, which allows for uniform curing and gives the product a more tender structure than other cured meats. After light smoking with ash wood, almond husk, and Mediterranean scrub essences, the soppressata is cured for about 100 days and pressed between marble slabs, developing intense yet balanced aromas and a sweet flavor typical of artisanal cured meats.
The skin has an amber hue when seen, while the flesh is deep red, with streaks of white fat. On the palate, sweet and aromatic notes emerge, accompanied by a delicate smoke, perfect for enjoying thinly sliced with local cheeses or a good glass of wine.

Cured cured meats and cheeses are products that tolerate short temperature variations during transport. To ensure the best preservation they are shipped vacuum-packed. Once you receive the product, it is recommended to store it in the refrigerator.
