Azienda Cervellera's Spicy Soppressata is an artisanal cured meat typical of the Martinese tradition, made with selected meat from pigs raised in the wild in the lower Murgia Pugliese. The knife-point processing of the meats, combined with salt, pepper, cooked vin, and a touch of chili pepper, gives the product a soft yet compact texture and a bold, just the right amount of spicy flavor, with delicate yet lingering woody and smoky scents.
The cured meat is stuffed into natural pork casings characterized by their wide, irregular shape, which allows for uniform curing and a more tender structure than other cured meats. After light smoking with ash wood, almond husk, and Mediterranean scrub essences, the soppressata is cured for about 100 days and pressed between marble slabs, developing intense aromas and a harmonious flavor, with sweet, aromatic notes and a well-balanced spicy aftertaste.
It looks bright red, with thick flesh grain and small veins of white fat. On the palate, saltiness, smoky aroma and balanced spiciness emerge, perfect to enjoy in thin slices, accompanied by local cheeses or a good glass of wine.
Ingredients: fresh pork, salt, hot chili pepper, vincotto (white wine, cooked grapes, sulphites), spices, flavourings, Mediterranean scrub herbs, antioxidant E301, preservatives E252-E250. Smoked with ash wood. CONTAINS NO GLUTEN AND LACTOSE
