The Spicy Schiacciata Salami in Bran from the Cervellera Company is a unique artisanal cured meat made with selected meat from pigs raised in the wild in the lower Murgia Pugliese area. This special preparation takes up an ancient tradition: when breeders did not have enough natural casings, they used bran to season the mashed potatoes. Cervellera has recovered this historic method, giving the product an authentic, original taste with a pleasant spicy note.
The cured meat is obtained from a selection of noble cuts of hams, shoulders and trims of bacon and tender lard. The meats, hand-reduced with the tip of a knife and left to rest for 24 hours, are flavored with salt, pepper, hot chili pepper, cooked wine, spices and herbs from the Mediterranean scrub, then wrapped in bran and lightly smoked with ash wood. Curing for about 60 days develops intense aromas and a harmonious flavor with a balanced spicy note.
The product appears compact, with a light golden crust due to the bran and veins of white fat. On the palate, aromatic and flavorful notes emerge, with the right balance between smoke and spiciness, ideal for enjoying thinly sliced with homemade bread or local cheeses.

Cured cured meats and cheeses are products that tolerate short temperature variations during transport. To ensure the best preservation they are shipped vacuum-packed. Once you receive the product, it is recommended to store it in the refrigerator.
