This cold cut is made from selected pork cuts with small amounts of pork fatback and is seasoned with salt, pepper, and cooked wine, added during the meat mixing process. After being stuffed and hand-tied, it is smoked with oak and almond bark.
Visually, the slice appears compact, with a red color and clearly defined white fat against the lean. On the nose, it exudes primarily wood and smoke aromas—intense but not overpowering—that return to the palate with a savory and aromatic flavor.
For the palate, it’s a triumph: its unique character comes from the acorn aftertaste, which dominates the diet of free-range pigs raised in our Mediterranean scrubland.
Aging: 100 days
Storage: Store the product at room temperature and avoid covering it with plastic wrap.
Pairing: Serve as an appetizer with toasted bread, brie, and slices of Cervellera salami, drizzled with extra virgin olive oil and balsamic vinegar glaze.
