Spicy Martinese Salami from Azienda Cervellera is an artisanal cured meat typical of the Martinese tradition, made with selected meat from pigs raised in the wild in the lower Murgia Pugliese. Hand-processed meats, combined with salt, pepper, cooked wine, and hot chili pepper, give the product a firm texture and a bold, aromatic, and spicy flavor.
Salami takes its name from its horseshoe shape, due to the natural casing used for the bagging, and is characterized by a light smoke with ash wood and almond bark, which enhances the flavor of the meat without making it invasive. After curing for about 100 days, the salami develops intense and clean aromas, with an acorn aftertaste, typical of the diet of pigs raised in the wild in the Mediterranean scrub.
The slice appears compact, deep red in colour, with well-distributed veins of white fat. On the palate, aromatic flavors emerge, light hints of smoke and balanced spiciness, perfect for enjoying thinly sliced, with bruschettato bread, local cheeses or a drizzle of extra virgin oil and balsamic vinegar glaze.
Ingredients: fresh pork, salt, hot chili pepper, vincotto (white wine, cooked grapes, sulphites), spices, flavourings, Mediterranean scrub herbs, antioxidant E301, preservatives E252-E250. Smoked with ash wood. IT DOES NOT CONTAIN GLUTEN AND LACTOSE.

Cured cured meats and cheeses are products that tolerate short temperature variations during transport. To ensure the best preservation they are shipped vacuum-packed. Once you receive the product, it is recommended to store it in the refrigerator.
