Filetto Martinese dell'Azienda Cervellera is an artisanal cured meat made from pork undercoast, with or without rind, from animals raised in the wild in the lower Murgia Pugliese. Thanks to traditional processing and curing for approximately 150 days, the fillet releases delicate aromas and a balanced, aromatic and slightly smoky flavour.
The preparation involves adding coarse sea salt, pepper, and cooked wine to the meat, stuffing it in natural 100% Italian pork casings, and lightly smoking it with strawberry zest, which gives the product subtle but lingering woody and smoky notes.
On view the fillet shows a uniform red color and a well-distributed fat. On the palate, a harmonious and aromatic taste emerges, perfectly balanced between the saltiness of the cured meat and the light smoky aroma. It is ideal to enjoy in thin slices, as an appetizer, on homemade bread or to enrich hot and cold dishes with a touch of authentic flavor.
Ingredients: pork, salt, pepper, vincotto (white wine, cooked grapes, sulphites), spices, flavourings, antioxidant E301, preservatives E252-E250. Smoked with ash wood. IT DOES NOT CONTAIN GLUTEN OR LACTOSE.
Net weight: approximately 500 gr, approximately 750 gr and approximately 1 kg
