This product is the result of meticulous processing of pork ribs, which includes the valuable adipose fat and can be presented with or without the rind. The carefully selected meats are then enhanced with the addition of coarse sea salt, vin cotto, and black pepper, ingredients that elevate the authentic flavor of tradition. The mixture is then encased in natural pork casings, strictly 100% Italian, ensuring the highest quality and authenticity. The process is completed with a light natural smoking, achieved using oak bark, which gives the product a distinctive and refined aromatic note.
Aging: 150 days
Storage: Store the product at room temperature and do not cover with plastic wrap.

Since this product is available in various sizes and is hand-cut, slight weight variations may occur. Our staff strives to minimize these differences to ensure maximum accuracy. The products are vacuum-sealed to ensure freshness. Although these are cured products that do not require constant refrigeration, we prefer to ship the package at the beginning of the week. Therefore, if the order is placed after 12:00 PM on Thursday, the shipment will be made the following Monday to minimize the time the order spends in the courier’s warehouse over the weekend.
