For all Cervellera products, only animals that live in the wild in the lower Murgia region of Puglia are used. The products are processed using artisanal methods.
The part used to produce this salume is pork or wild boar jowl, carefully trimmed.
Preparation Method
Salting Phase:
The jowl is deboned and salted with the addition of pepper and natural herbs for about 8 days. It is then washed with vin cotto*. After drying, it is seasoned again with natural herbs (pepper, chili pepper, and forest aromas).
Smoking Phase:
The product is smoked for at least one day using oakwood (a local tree found only in the Pianelle Woods of Martina Franca), thyme, and rosemary.
Aging Phase:
The jowl is aged inside a trullo for at least 60 days. This product is commonly used for making "matriciana."
*Vin cotto: a wine obtained by fermenting grape must with the addition of reduced must, boiled down to 1/10 of its volume.
Ingredients: Pork, salt, pepper, vin cotto, antioxidants E301, preservatives E252-E250, smoked with oakwood.
Storage conditions: Store in a dry and cool environment.
Contains no gluten or lactose.

Since this product is available in various sizes and is hand-cut, slight weight variations may occur. Our staff strives to minimize these differences to ensure maximum accuracy. The products are vacuum-sealed to maintain freshness. Although these are cured products that do not require constant refrigeration, we prefer to ship packages at the beginning of the week. Therefore, if the order is placed after 12:00 PM on Thursday, shipping will occur the following Monday to minimize the time the order spends in the courier’s warehouse over the weekend.
