Cuccimanné is the abbreviated name for the cutrettola, a small bird found in the Susumaniello vineyards in Salento.
This wine has a pale pink color. On the nose, it releases floral notes mixed with fresh Mediterranean fruits. On the palate, there are hints of redcurrant and raspberry. The must obtained from freshly pressed grapes remains in contact with the skins for a few hours at a temperature of 15-16 °C. It ages in the bottle for about 2 months. The wine is bottled in a white glass burgundy bottle, and the closure (cork) is made from bioplastic materials derived from sugar cane.
This closure is the result of years of research by the company NOMACORC, designed to facilitate optimal oxygen permeability in the wine. It is ready for consumption about 2 months after bottling and retains its organoleptic characteristics for at least four years.
