Artisanal frise made with a balance of barley flour and durum wheat flour, traditionally processed with water, salt, and yeast. A simple and genuine recipe that enhances different cereals, expressing an authentic taste linked to the gastronomic culture of Southern Italy. With a slightly more intense and rustic flavor than the classic version, they are ideal to soak and season with fresh tomato, extra virgin olive oil and seasonal vegetables. Perfect for a healthy Mediterranean cuisine full of character.
Before being consumed, they are immersed in water for a few seconds, until they reach the desired consistency, which can vary from slightly softened to softer, depending on your taste.
Once wet, the friselle are seasoned with a variety of fresh ingredients. Classic versions include ripe cherry tomatoes, extra virgin olive oil, oregano, and salt, but can be enriched with cheeses, olives, tuna, capers, and seasonal vegetables. This versatile dish can be served as an appetizer, snack, or light meal, and is especially popular on hot summer days.
