Artisanal frise made with Tritordeum wheat flour, an innovative cereal resulting from over thirty years of research, obtained from the natural cross between durum wheat and wild barley. Worked according to tradition with simple ingredients, they represent a meeting between innovation and Mediterranean gastronomic culture. With an intense and slightly rustic taste, these whole wheat frises stand out for their fragrance and nutritional profile rich in fiber and protein. Perfect to soak and season with fresh tomato, extra virgin oil and vegetables, they are ideal for a healthy, genuine cuisine linked to the tradition of Southern Italy.

Before being consumed, they are immersed in water for a few seconds, until they reach the desired consistency, which can vary from slightly softened to softer, depending on your taste.

Once wet, the friselle are seasoned with a variety of fresh ingredients. Classic versions include ripe cherry tomatoes, extra virgin olive oil, oregano, and salt, but can be enriched with cheeses, olives, tuna, capers, and seasonal vegetables. This versatile dish can be served as an appetizer, snack, or light meal, and is especially popular on hot summer days.

Interesting fact: in the Salento dialect, the action of softening frise (also called friselle, or rather, "friseddhe") in water is indicated with the verbs sponzare or mmuddare, depending on the area.
