Description

Artisanal frises made with barley flour and regrind semolina, traditionally worked with water, salt, and natural yeast. A simple and genuine preparation that enhances the cereals and gastronomic culture of Southern Italy. With a rustic and slightly intense taste, they are ideal to wet and season with fresh tomato, extra virgin olive oil and seasonal vegetables. Perfect for authentic Mediterranean cuisine, healthy and full of flavour.

Before being consumed, they are immersed in water for a few seconds, until they reach the desired consistency, which can vary from slightly softened to softer, depending on your taste.

Once wet, the friselle are seasoned with a variety of fresh ingredients. Classic versions include ripe cherry tomatoes, extra virgin olive oil, oregano, and salt, but can be enriched with cheeses, olives, tuna, capers, and seasonal vegetables. This versatile dish can be served as an appetizer, snack, or light meal, and is especially popular on hot summer days.

Interesting fact: in the Salento dialect, the action of softening frise (also called friselle, or rather, "friseddhe") in water is indicated with the verbs sponzare or mmuddare, depending on the area.
